Preserved small fresh Arctic char, lightly salted in brine, prepared and canned by hand, coated with vinegar and Pyrenean fir pepper and covered with extra virgin olive oil. Fish, vinegar, pepper and oil are all labeled AB.
Manufacturing: The small Arctic char are raised at an altitude of 1150m at the fish farm in La Fajolle (11). They are canned in our laboratory in Esperaza (11). Presented for the first time in canned small fish, the Arctic char, queen species of the salmonid family, is distinguished by its flesh of unequaled finesse and subtlety. Enhanced by the exceptional products created by Abies Lagrimus, they will offer the most daring delicatessens an unprecedented touch of refinement in the canned fish department.
