La Truitelle ecological preserves contain, depending on their size, two to four small whole rainbow trout, canned by hand. Their artisanal breeding, in the crystalline waters of springs and mountain torrents, gives them a texture very similar to those of wild fish. Just salted by brining, they are pre-steamed and then simply canned without oil or mineral water, to offer the pure taste of mountain trout!
