La Truitelle ecological preserves contain, depending on their size, two to four small whole rainbow trout, canned by hand. Their artisanal breeding, in the crystalline waters of springs and mountain torrents, gives them a texture very similar to those of wild fish. A generous slice of lemon adds, to their association so natural with a quality extra virgin olive oil, a touch of acidity and a nice sensation of freshness!
