La Truitelle ecological preserves contain, depending on their format, two to four small, whole rainbow trout packed by hand. Their artisanal breeding, in the crystal clear waters of springs and mountain torrents, gives them a texture very close to that of wild fish. Covered in a tomato sauce subtly enhanced with smoked paprika and a hint of Espelette pepper, our trout are delicious and spicy.
