Gerard et sa fille Marie

Famille Lepetit

Ussac, Correze, France

In the heart of Corrèze, the Maison Lepetit cannery is historically located in Ussac, a small town in the Pays Gaillard region, near Brive-la-Gaillarde. At the gateway to Périgord and Quercy, this is the land of sandstone houses with slate roofs, green valleys, and gourmet restaurants!

In the Southwest, each family home has its own tradition. That of Maison Lepetit is first and foremost a quest for artisanal excellence, family know-how, a very precise method of preparation, cooking, preservation...

For Maison Lepetit, the duck is above all a family affair. Fabien and Marie took over the reins of the family cannery, remaining faithful to the traditions and manufacturing secrets of their parents. A close collaboration with the breeders allows them a rigorous selection of the raw material in order to satisfy your taste buds. Foie gras, rillettes, terrines 100% France

FRENCH DUCK FOIE GRAS

Ingredients :

Duck foie gras (98%), salt, pepper, nutmeg, Sauternes, gelatin

Our foie gras are made in accordance with traditional recipes from the South West. They are guaranteed without dyes or preservatives.

Preparation tip:

Put the foie gras in the fridge for a few hours (12 to 24 hours, between +2 and +4°C) and take it out 30 minutes before serving it. Once removed from the refrigerator, wrap it in transparent film to prevent natural oxidation.

The foie gras is cut with a very fine toothless knife, dipped in hot water and wiped after each cut. However, the wire to cut the butter is the ideal instrument.

Allow 40 to 60 grams per person.

Taste it on grilled toast, a slice of gingerbread or accompanied by fig confit for sweet and savory lovers.
